Ingredients:

4 large russet potatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
1/4 cup diced red onion
1/4 cup diced tomatoes
1/4 cup sliced Kalamata olives
Tzatziki sauce for drizzling
Directions:

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Cut the potatoes into thin fries and place them in a large bowl. Toss with olive oil, garlic powder, dried oregano, salt, and pepper until evenly coated.
Spread the fries in a single layer on the prepared baking sheet. Bake for 25-30 minutes, turning halfway through, until fries are golden brown and crispy.
