Crispy Potato Nacho Platter

Ingredients:

4 large russet potatoes, thinly sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup sliced green onions
1/4 cup diced tomatoes
1/4 cup sliced jalapenos
Sour cream and salsa, for serving
Directions:

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss sliced potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
Arrange potato slices in a single layer on the prepared baking sheet.
Bake for 20-25 minutes, flipping halfway through, until potatoes are golden brown and crispy.
Remove from oven and sprinkle shredded cheddar cheese over the potatoes. Return to the oven and bake for an additional 3-5 minutes, or until the cheese is melted and bubbly.
Remove from oven and top with crumbled bacon, sliced green onions, diced tomatoes, and sliced jalapenos.
Serve immediately with sour cream and salsa on the side.
