Ingredients:
4 bone-in, skinless chicken thighs
1 pound boneless, skinless chicken breasts
1 large onion, diced
1 red bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
1 (14.5-ounce) can diced tomatoes
1/2 cup chicken broth
1/4 cup dry white wine
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1/4 cup chopped fresh parsley for garnish
Directions:
Place the chicken thighs and chicken breasts in the bottom of your slow cooker.
Add the diced onion, sliced red and green bell peppers, and minced garlic on top of the chicken.
Pour in the crushed tomatoes, diced tomatoes, chicken broth, and dry white wine.
Sprinkle in the dried basil, dried oregano, dried thyme, red pepper flakes (if using), salt, and pepper.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
Before serving, remove the chicken and shred it into large pieces. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
Garnish with fresh parsley before serving.
