Italian Chicken Scampi with Garlic Parmesan Rice

Ingredients:

For the Chicken Scampi:

4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
4 tablespoons butter, divided
4 cloves garlic, minced
1 cup chicken broth
1/4 cup fresh lemon juice
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan cheese
For the Garlic Parmesan Rice:

2 cups long-grain white rice
4 cups chicken broth
4 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Directions:

Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Remove chicken from skillet and set aside.
In the same skillet, melt 2 tablespoons of butter. Add minced garlic and cook until fragrant, about 1 minute.
Stir in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 5 minutes.
Return chicken to the skillet and simmer for an additional 2-3 minutes.
Stir in chopped parsley and grated Parmesan cheese. Remove from heat.
In a separate pot, combine rice, chicken broth, and minced garlic. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
Fluff the cooked rice with a fork. Stir in grated Parmesan cheese, chopped parsley, salt, and pepper.
