Ingredients:
Quantity Ingredient
2 Ripe bananas, mashed
2 Eggs
1/2 cup Unsweetened applesauce
1/4 cup Honey
1/4 cup Unsweetened almond milk
1 tsp Vanilla extract
1 1/2 cups Old-fashioned rolled oats
1/2 cup Whole wheat flour
1 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
1/2 cup Dark chocolate chips
Instructions:
Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
In a large mixing bowl, combine the mashed bananas, eggs, applesauce, honey, almond milk, and vanilla extract. Mix well.
In another bowl, whisk together the oats, whole wheat flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
Gently fold in the dark chocolate chips.
Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
