Ingredients:

8 oz rotini pasta
1 cup cherry tomatoes, halved
1/2 English cucumber, diced
1/4 red onion, thinly sliced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and black pepper, to taste
Directions:

Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and chopped parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
Pour the dressing over the pasta salad and toss until well combined.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
