Ingredients:
1 cup heavy cream
1 cup creamy peanut butter
1 cup powdered sugar
1 teaspoon vanilla extract
1 (8 oz) package cream cheese, softened
1 cup brewed coffee, cooled
2 tablespoons coffee liqueur (optional)
1 package ladyfingers
1 cup semisweet chocolate chips, melted
Cocoa powder, for dusting
Chopped peanuts, for garnish (optional)
Directions:
In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
In another bowl, beat together the creamy peanut butter, powdered sugar, and vanilla extract until smooth.
Add the softened cream cheese to the peanut butter mixture and beat until well combined and creamy.
Gently fold the whipped cream into the peanut butter mixture until fully incorporated. Set aside.
In a shallow dish, combine the cooled brewed coffee and coffee liqueur (if using).
Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long to avoid sogginess.
Arrange a layer of dipped ladyfingers in the bottom of a 9×13 inch baking dish.
Spread half of the peanut butter mixture over the ladyfingers, smoothing it out into an even layer.
Drizzle half of the melted chocolate over the peanut butter layer.
Repeat the layers with the remaining ladyfingers, peanut butter mixture, and melted chocolate.
Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together.
Before serving, dust the top with cocoa powder and sprinkle with chopped peanuts if desired.
