Ingredients:

– 2 cups old-fashioned oats
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 teaspoon ground cinnamon
– 2 cups milk (dairy or non-dairy)
– 1/4 cup maple syrup
– 2 eggs
– 2 tablespoons melted butter or coconut oil
– 1 teaspoon vanilla extract
– 2 cups fresh or frozen blueberries

Directions:

1. Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish.
2. In a large bowl, mix together oats, baking powder, salt, and cinnamon.
3. In another bowl, whisk together milk, maple syrup, eggs, melted butter or coconut oil, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until well combined.
5. Gently fold in the blueberries.
6. Pour the mixture into the prepared baking dish and spread it out evenly.
7. Bake for 35-40 minutes or until the top is golden brown and the oatmeal is set.
