Crunchy Peanut Butter Chocolate Bites

Ingredients:

1 cup creamy peanut butter
1/4 cup unsalted butter, softened
2 cups powdered sugar
2 cups Rice Krispies cereal
1 1/2 cups semi-sweet chocolate chips
1 tablespoon coconut oil (optional)
Directions:

In a large bowl, mix together the peanut butter and softened butter until smooth.
Gradually add the powdered sugar, mixing until well combined.
Gently fold in the Rice Krispies cereal until evenly distributed.
Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between until smooth.
Dip each peanut butter ball into the melted chocolate, allowing any excess to drip off. Place the coated balls back on the parchment paper.
Refrigerate until the chocolate is set, about 15 minutes.
