Ingredients:
1/2 cup unsalted butter, melted
1 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup creamy peanut butter
1 cup Reese’s peanut butter cups, chopped (about 10-12 mini cups)
Directions:
Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan and set aside.
In a large mixing bowl, whisk together melted butter and brown sugar until well combined.
Add the egg and vanilla extract, and whisk until smooth.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Spread half of the batter into the prepared baking pan.
Drop spoonfuls of peanut butter evenly over the batter, then sprinkle with chopped Reese’s peanut butter cups.
Spoon the remaining batter over the top and spread it evenly to cover the peanut butter cups.
Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Allow to cool completely in the pan before slicing into bars.
