Ingredients:
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup barbecue sauce
2 tablespoons bourbon
1 tablespoon brown sugar
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Salt and pepper, to taste
8 slices bacon, cut into 1-inch pieces
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks
Wooden skewers, soaked in water for 30 minutes
Directions:
In a bowl, combine barbecue sauce, bourbon, brown sugar, garlic powder, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well.
Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Preheat grill to medium-high heat.
Wrap each chicken cube with a piece of bacon and thread onto skewers, alternating with bell pepper and onion chunks.
Grill kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through and bacon is crispy.
