Jello Cookies

Ingredients:

1 box (3 oz) Jello gelatin mix, any flavor
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Directions:

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large mixing bowl, cream together butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Divide the dough into portions and roll into balls.
Roll each ball in Jello gelatin mix until coated.
Place the coated balls on the prepared baking sheets, spacing them 2 inches apart.
Flatten each ball slightly with the bottom of a glass.
Bake for 8-10 minutes, or until the edges are set.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
