Ingredients:
1 cup (2 sticks) unsalted butter, room temperature
1 cup granulated sugar
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 (21 oz) can blueberry pie filling
1/2 cup powdered sugar, for dusting (optional)
Directions:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large mixing bowl, cream together butter, granulated sugar, and salt until light and fluffy.
Beat in eggs, one at a time, then add vanilla extract.
Gradually add flour and mix until just combined.
Press 2/3 of the dough mixture into the bottom of the prepared baking dish.
Spread blueberry pie filling evenly over the dough.
Crumble the remaining dough mixture over the blueberry filling.
Bake for 45-50 minutes, or until the top is golden brown.
Allow to cool completely in the pan before cutting into bars. Dust with powdered sugar if desired.
